One region, two very different holidays
Puglia is the heel of Italy and it is long. The northern half — Polignano a Mare, Monopoli, Ostuni and the Valle d’Itria behind them — is white towns, trulli, olive groves and a limestone coast riddled with sea caves. Salento, the tip, is a separate proposition: Otranto and Santa Maria di Leuca on the eastern side, Gallipoli on the Ionian, and water that most visitors did not expect to find in Italy. Both are worth a week; neither is worth half of one.
The region has been discovered, and the numbers say so plainly. Puglia recorded 6.7 million arrivals in 2025, up almost 13% year on year, with foreign arrivals up a quarter and Bari province growing fastest of all. That is why the good boats, the good chefs and the good tables now go early in summer, and why the shoulder weeks are the ones we push people toward.
The sea caves, described accurately
The signature boat day here is the sea-cave circuit at Polignano a Mare: about 1.5 hours past Grotta Palazzese, Grotta Ardito, Grotta delle Rondinelle and Grotta degli Innamorati. It leaves from San Vito, the small harbour hamlet a couple of kilometres north of town — not from Lama Monachile, the beach in the ravine that every photograph shows. The boats that can actually get inside the caves are small, taking up to 10 people, which is the whole reason a big vessel gives you a different trip than the pictures promised.
Further south the same idea repeats at scale. Santa Maria di Leuca sits where two seas meet and runs cave circuits on both sides, the skipper choosing whichever is calmer that morning; eight or more dedicated cave-tour businesses work that one small town.
What things honestly cost
We do not set prices — we send you the rate the local business charges for your dates, itemised. As planning anchors: shared cave tours at Polignano run roughly 25 to 35 EUR per person and at Leuca roughly 20 to 40 EUR; a private boat at Polignano is around 250 to 300 EUR for 1.5 hours; cooking classes run about 90 to 365 EUR per person depending on length and format; a valley winery visit with tasting is around 15 EUR per person. Private chefs are the exception: nobody here publishes a rate, and every dinner is quoted per menu and party — we would rather explain that than invent a per-head figure.
Airport transfers are the other honest gap. No chauffeur company we have verified publishes per-route fares, so the only public numbers are the official airport taxi tariff and the aggregators — useful for planning, replaced by a real quote before you book.
Food is the actual reason to come
The chefs and the class hosts in Puglia are frequently the same people: villa dinners, catering, masterclasses and orecchiette-with-grandma sessions come off the same small bench of independents around Ostuni and the Valle d’Itria. Classes teach the real repertoire — orecchiette, focaccia barese, panzerotti, taralli — and end with you eating what you made. Inland, the wine is the under-known part: Minutolo, Verdeca and Bianco d’Alessano alongside Primitivo and Susumaniello. And around Ostuni, two working oil estates open their underground mills and millenary groves by reservation only.

Boats are run by registered local operators and skippers, with skippered charter requiring a skipper holding the Italian patente nautica on a boat registered for charter use. Guiding is a regulated profession in Italy: the tours we arrange are led by guides on the national register created by the 2023 law. Transfers are NCC — licensed chauffeur hire booked ahead, not the taxi rank. We arrange, confirm and stay reachable; the people who deliver the day answer for it.
When to come, and what the weather decides
Season runs May to October, heaviest June to August, though the boats work March to October and the land side runs all year. Cave access is a wind question, not a temperature one: northerlies chop up the eastern coast, a strong scirocco troubles the Ionian side, and same-day calls are routine. Free cancellation up to 24 hours before is the norm on shared boat trips, and we confirm your specific terms in writing first.
