The image people have — kneading pasta inside a conical stone house with the fire going — is real, but it happens in the countryside rather than in Alberobello’s centre. The trullo and farmhouse kitchens hosting these classes are around Martina Franca, roughly five minutes by car from Alberobello, and a typical session is about 1.5 hours of making followed by a full meal of what you produced. That is the version worth booking: a working kitchen with a family in it, not a demonstration staged for a coach.

We should also be straight about the name on this page. Orecchiette are associated far more with Bari and the Lecce side than with Alberobello, and searches reflect that — the Alberobello angle here is the trullo setting and the day-trip pairing rather than the town having any special claim on the dish. Booked for the setting, it is one of the best afternoons in Puglia. Booked expecting Alberobello to be the home of the pasta, it is a slight misunderstanding.
