A chef at the house solves the arithmetic of that: nobody drives, nobody watches the clock, and the table you paid for gets used properly at least once in the week.
It also happens to be the region where this makes the most culinary sense. The food here is simple, seasonal and depends entirely on what was picked that morning, which is exactly the kind of cooking that suffers under a printed restaurant menu and thrives when someone shops for your table specifically.
Who actually cooks
The private chefs verified in this region work out of Ostuni and the Valle d’Itria, cooking in villas and masserie across the surrounding towns. It is a small, independent bench rather than an agency, and what they sell varies more than you would expect: villa dinners, catering for small events, masterclasses, chef-at-home at holiday accommodation, and orecchiette sessions with tastings of oil, wine and cheese attached. The same names frequently teach and cook, so an afternoon class and an evening dinner can be one arrangement with one person.
What lands on the table is the regional repertoire — orecchiette, focaccia barese, panzerotti, taralli — the same dishes the cooking classes teach, usually alongside the local wine, which means Minutolo, Verdeca or Bianco d’Alessano rather than anything you would recognise from a supermarket.
What it costs, honestly
There is no rate card, and we will not invent one. None of the chefs verified in Puglia publish rates: every dinner is quoted per menu and per party, and no comparable published range exists that we would be willing to put on a page. What we can tell you is what moves the number — the menu and its ingredients, the headcount, how long the chef is with you, whether you need someone serving as well as cooking, and travel to your address. A quiet dinner for six and a fortieth birthday for twenty-four are different jobs, and the second one usually needs a team rather than a chef.

Who cooks, and what we do
The chef is an independent local professional who prices their own work and answers for the food. Our part is arranging it: we take your details to chefs who are free on the date, confirm the menu and timings directly with them, and stay reachable if the plan moves. We do not run a kitchen, and nothing is booked until you say yes.
Chefs and classes run year-round here, unlike the boats — so this works in November as well as August, though the summer dates go first.
