Learn the pasta where it comes from

Orecchiette are not difficult so much as unteachable in writing. Semolina, water, a blunt knife, and a wrist movement that either clicks in the first twenty minutes or does not click at all until someone stands beside you and does it slowly. Monopoli is a sensible place to have that happen: classes run in and around the town, it is an easy base, and there is a harbour to walk to afterwards while the semolina is still under your fingernails.

Classes in this area run about 1.5 to 4 hours, priced roughly 90 to 365 EUR per person depending on length and format, with a minimum of two or three guests. That is a wide range for a reason: a short pasta session and a four-hour class that ends in a full meal are genuinely different days sold under the same heading, and we always say which one an option is.

The syllabus

The dishes are the regional ones — orecchiette, focaccia barese, panzerotti and taralli — and the class ends with everyone eating what they made, usually with wine. Ask about the vegetables while you are there: Puglia treats them as the main event rather than a side, and the way a good host cooks cime di rapa or fave e cicoria is the part people quote back years later.

In their kitchen or in yours

Both work. A hosted class is more sociable and generally the better value. Alternatively, several of the same people who teach also cook as private chefs at holiday accommodation, and the Puglia bench is small enough that the teacher and the chef are frequently one person — so a class at your villa followed by dinner you did not have to clear up is a normal arrangement.

Practicalities and terms

Minimum party sizes apply, usually two or three, so solo travellers may be joining an existing group. Free cancellation up to 24 hours before is the marketplace standard, but the independent hosts publish no terms of their own, which is why we put yours in writing first. Classes run year-round, unlike the boats, which makes this the obvious answer to a day the wind has taken the sea caves away.

Who teaches

An independent local host or chef, in their own kitchen, cooking their own food. We take your dates and group size to hosts who are genuinely free, confirm the format and what is included directly with them, and stay reachable if anything moves. Nothing is booked until you confirm.

More so, usually. Orecchiette are a technique rather than a recipe, and it is very hard to learn from a video. Watching someone who has made them daily for decades is the shortcut, and confident cooks get further in the same two hours.
