The independents verified here are based around Ostuni and the Valle d’Itria and travel to villas and masserie across the surrounding towns, and neither Monopoli nor Polignano has a town-based chef scene of its own. That is not a problem — it is simply why availability here is a question of the date and the drive rather than a local name.
