Lagos rewards staying in. The villas above the town come with the terrace and the view; what they do not come with is anyone to cook, and the alternative on a July evening is a table booked at nine, a taxi each way and a walk back up the hill. A chef in the house turns that into the simplest night of the week — you are already home when dinner starts.

Groups here tend to book chefs for two kinds of evening: the celebration night, and the recovery night after a full day out on the water at the grottoes. Both are better on your own terrace than in the middle of a holiday town at peak season.
